It was operated by two Canadians, Karen Hansson, Spatz International's European Co-ordinator, and Thomas "TJ" Strickland, the restaurant's manager. Vas Blackwood, Stephanie Charles, Jonathan Copestake, Sue Devaney, Joe Greco, Katy Murphy and Ling Tai appeared as Spatz restaurant employees.
